Born in Doué-la-Fontaine, France, Jackie Jégat began his apprenticeship at sixteen in Saumur before mastering his craft in the bakeries of Paris. In 1985 he brought that craft across the ocean to Monterey — and Paris Bakery was born.
Today the family still rises before dawn to shape every baguette by hand, laminate each croissant, and pipe every rosette. Nothing is outsourced, nothing is frozen overnight. It is the taste of a real French boulangerie, two blocks from Alvarado Street.
